At first I thought it was Vietnamese due to the theme of mint or basil on the top of the noodles, but upon closer inspection there seems to be carrots and potatoes? Or perhaps I am mistaking it for something else. What is the name of this dish? It isn't pho because pho has soup, this has no soup.

It looks like curry in noodles. If it's Viet, it's not a common dish.

Just make curry but instead of having it with naan or rice use rice noodles instead.

I like curry and I like noodles so this is a divine combination. I once had glass noodles in a spicy satay like sauce. It had mussels in it, it was good. Does that come in the same category as this dish?

I like curries too and I understand how taste is subjective but the one in the photo doesn't look appetizing to me It looks like an English curry which is a toned down version preferred by westerners. I'm actually not a big fan of North Indian curries (not an expert on Indian curries so if anyone knows better, feel free to correct me here but I hate the curries prepared by the same chefs that gave us butter chicken). I'm not opposed to cumin though as it's used in some of the more popular Chinese dishes. My favorite curries are Thai curries, Bhutanese and Northeast Indian variants (like Assamese). Basically thinner and producing more heat. Nonetheless, it's an interesting combination. Speaking of combinations, I recently tried sweet potato noodles with lotus roots, black bean, sesame seed, chili peppers, korean soybean paste, gingered fried chicken, garnished by kimchi. It was 'interesting'.

Butter chicken I've never had that It sounds yummy, is it good? defiancexyzz I thought it would look more buttery lol That's exactly how it looks lol It doesn't look very buttery and doesn't taste like butter (which is quite good, burnt butter and sage gnocchi is the perfect example of how a buttery dish should be) If you prefer cream in your coffee and cake, or are a fan of rich food like cabonara then you'll probably like butter chicken. Personally, it's waaay to heavy a dish for me. A few mouthfuls and I already feel sick.
