Foods and cuisines that are considered ~elegant and sophisticated~ are usually associated with populations that are deemed ~elegant and sophisticated~ and add to this the fact that it's usually overrated and overpriced, this actually really brings home the message of sociological hierarchy and ethnic or racial privilege.
Further to that, certain "ethnic" cuisines are commonly appropriated by chefs that enjoy societal privilege who are able to charge a premium for taking that dish and making it become a trend. It's "ew, that looks / smells weird" when a POC eats and cooks their own food, but it's "wow, so unique, so cultured, so tasty" when a sociologically privileged chef cooks it.

Honestly, anyone that mistakes price and 'brand' for quality has been ripped off big time. Chinese food has always been the best value for money and people who indulge in Chinese cuisine are spoiled by choice. I have nothing against elegant and pricey French or Scandinavian cuisine for instance, or even Japanese cuisine. There's no denial that the presentation is impeccable, the taste is classy and the ingredients refined. However, Chinese cuisine is the only one that doesn't bore me with the same old, same old. The huge range of culinary specialties is as vast as the nation and people of China itself. Plus it's what I grew up eating. It's what mom cooks and to every son, mom's cooking is the best in the world
